Pink GrapefruitâChampagne Sorbet Cocktail
Thereâs nothing I like better than very, very cold Champagne. So cold that I usually drop a small ice cube into my glass to make sure itâs as chilled as possible. I always feared that it was offensive and crass to ice down Champagne until I went to a tasting of Krug Champagne, considered by many to be the finest of them all. I didnât dare drop an ice cube into any of the glasses that were presented to me, but I did confide that I often did so to one of their experts, who surprised me by saying that itâs perfectly acceptable to put a bit of ice in Champagne for the very reason I do it. For this sorbet, you donât need to use the finest French Champagne. In fact, Iâve made it successfully with Italian prosecco and Spanish cavaâwithout offending anyone.
Meyer Lemon Sorbet
There were quite a few things I missed about the Bay Area when I packed up my bags and moved to France. Burritos, bean-to-bar chocolates, and âcenteredâ people were some of them. Okay, I didnât miss the centered people. But I was surprised at how much I missed Meyer lemons, which are sweeter and more perfumed than regular Eureka lemons. Their vibrant, deep yellow color makes other lemons pale in comparison. If youâre lucky enough to know someone with a Meyer lemon tree, youâre likely to be handed a large sack of them when the fruits are in season. Some greengrocers and specialty markets now carry them, too. Otherwise, you can use regular Eureka lemons in this recipe, but increase the sugar to 1 cup (200 g).
Champagne Gelée with Kumquats, Grapefruits, and Blood Oranges
Not all gelatin desserts are squidgy, old-fashioned jelled rings studded with oversweetened canned fruits. Take this thoroughly modern dessert, for example. Youâll see why it won top honors from a national food magazine that called it one of the âTop Ten Desserts of All Time.â
Cabarete
This drink transforms a standard Champagne cocktail into something a bit more zesty and floral. Bright orange in color, Aperol is a light aperitif with a unique bittersweet taste that blends beautifully with fruit and bubbly. Making watermelon juice is a snap; simply pop a wedge of seedless watermelon (without rind) into a blender, turn it on for two seconds, turn it off, and youâre done.
Champagne Sorbet
I love champagne and itâs a natural in desserts. This sorbet captures the airiness and effervescence of the wine, and adding a hint of lemon makes it super-refreshing. Champagnes differ in their sugar contents, which will affect whether or not the sorbet will freeze, so be sure to use Veuve Clicquot yellow label for this recipe.
Peach Bellini Milkshake
Every time I visit Venice, Italy, one of my first stops is Cipriani for their signature Bellini cocktail, a wonderful mixture of fresh peach puree topped with cold sparkling Champagne. To make my milkshake version kid-friendly, just top it off with a splash of seltzer water.
Lazy Sunday Mimosa
What can I say, girlfriends? It is not uncommon for my husband to serve me mimosas, along with breakfast in bed, on a Sunday morning. You think heâs looking for something in return? I figure we work hard all week and heâs just treating me special. I tell you what, though: Nothing kicks off a lazy, loving Sunday like a sip of bubbles. We make these drinks one at a time, allowing the shifting strawberries to mix the drink as you sip, but you could also combine the ingredients in a large serving pitcher.
