Manchego Cheese with Quince Paste
Manchego, made from rich sheep's milk, is perhaps the best known of the Spanish cheeses. Its flavor, similar to that of Parmigiano-Reggiano, provides an ideal foil for fruit or quince paste, a traditional accompaniment.
Broiled Apples with Maple Calvados Sauce
This quick dessert is like a crustless apple tart. It's a terrific way to use the fruit of the season and a perfect finish for the pork chops
Corned Beef Hash
If you choose to make this hash with eggs, you’ve got breakfast. Take away the eggs, pair it with a green salad, and dinner is served.
Baked Blueberry-Pecan French Toast with Blueberry Syrup
You don't have to be in the kitchen at the crack of dawn to prepare a terrific breakfast. In this recipe the French toast is soaked overnight like bread pudding — in the morning all you need to do is add the topping and pop it in the oven. Serve it with coffee, juice, and fresh fruit and you've got a well-rounded way to start the day.
Smoked Peppered Mackerel and Sour Cream on Homemade Potato Chips
Store-bought potato chips, heated to crisp and refresh, would make this a very quick hors d'oeuvre.
Maple Syrup Pie
Tarte au Sirop d' Érable
"My husband and I had an absolutely fantastic dessert at Restaurant Aux Anciens Canadiens while on vacation in Quebec, Canada," Says Deb Kalikow of Natick, Massachusetts. "Maple syrup pie served with crème fraîche is its specialty. The pie capped off a perfect dinner of delicious French-Canadian dishes. We ate at another restaurant the next night and tried the maple syrup pie there. We were so disappointed by our first bites that we then went back to Aux Anciens Canadiens and waited an hour just to have another piece of their pie."
Don't be tempted to forgo the cream with this pie; it perfectly complements the dessert's rich silkiness and balances the sweetness.
