THAI ANGEL HAIR PASTA

This can also be a non-vegetarian recipe with the addition of 1 lb. boneless/skinless chicken breasts. These would be cut into strips and marinated in the first 13 ingredients for 30 minutes at room temperature. Then grill or broil chicken until firm (about 3 minutes per side). Slice and add to the pasta.

Ingredients

1 1/3 C vegetable oil (peanut or canola)
1/2 C rice vinegar
1/4 C soy sauce
4t finely minced fresh cilantro
4t chopped green onion
1 small jalapeno, seeded and finely minced
2t fresh lime juice
2t dried red pepper flakes
1t sesame oil
1t red chili oil
1/2t Tabasco sauce
1/4 t white pepper
1/4 t minced garlic
12 oz. angel hair pasta
24 snow peas
2 carrots, julienned
4T chopped, roasted peanuts

Preparation

  1. Whisk first 13 ingredients in a bowl and blend well. Put in skillet/pan and bring to a boil. Reduce heat to low and keep warm. Prepare angel hair pasta according to package directions. While pasta is cooking briefly blanch the snow peas and carrots. Drain finished pasta, toss with the marinade sauce and the vegetables, and garnish with the chopped peanuts.
