GARLIC-LEMON CHICKEN WITH TARRAGON

Ingredients

Juice of one lemon
3 T. olive oil
Two large garlic cloves, peeled and coarsely chopped
1 T. dried tarragon,crushed
1/4 t.freshly ground black pepper
6 boneless, skinless chicken breasts

Preparation

  1. Mix all marinade ingredients in a resealable 1 gallon plastic bag, add chicken and marinate at least 2 hours in the refrigerator.

    Grill chicken,basting frequently with the marinade, until chicken is cooked throughout, but still juicy. Serve with Caesar salad, grilled tomatoes and crusty bread. Leftover chicken makes the best chicken salad, ever!
