Tzatziki

What is tzatziki you ask? It’s a cucumber sauce that they serve as a spread for pita bread in every Greek restaurant. And, if that doesn’t help, it’s the white sauce that they put on gyros. If you still don’t know what I mean, make it and you’ll find out.

Ingredients

1 cucumber
3 green onions
2 cloves garlic
4 ounces feta cheese
2 cups sour cream
Salt and pepper
6 pieces pita bread

Preparation

  1. Step 1

    Peel the cucumber, cut in half lengthwise, and scrape out the seeds with a spoon. Cut each piece in half again lengthwise and cut into very thin slices. If you have time, place the cucumber in a colander, sprinkle with salt, and let stand in the sink or over a bowl for 2 to 3 hours. (The salt will leech the water from the cucumbers so the sauce won’t get runny. If you need to skip this step because you don’t have time, decrease the sour cream by 1/2 cup.)

    Step 2

    Trim the green onions, discarding the ends, and cut all of the white and about 1 inch of the green parts into thin slices. Peel the garlic and finely chop.

    Step 3

    Place the feta cheese and sour cream in a bowl and stir until combined. Stir in the cucumber, onions, and garlic and season with salt and pepper.

    Step 4

    Cut each piece of pita bread into 8 wedges and serve on a large plate with the sauce on the side.
