3 large sweet potatoes, grated
2 medium-sized onions, grated or minced
1 green pepper, chopped fine
2 tablespoons melted bacon fat
1/4 teaspoon black pepper
1/8 teaspoon thyme
1/8 teaspoon marjoram
1/8 teaspoon sage

Preparation

  1. Mix all ingredients thoroughly. Place in a greased casserole, cover and bake in a moderate (350°F.) oven for 45 minutes or until potatoes are almost tender. Uncover and bake 15 minutes longer.
