Begin with endive spears dressed with oil and vinegar. Orzo pilaf with cherry tomatoes is a nice accompaniment. For dessert, have rhubarb compote with crème fraîche.

Ingredients

1 large fresh fennel bulb, trimmed, thinly sliced
1 large leek (white and pale green parts only), thinly sliced
1 1/2 cups peeled baby carrots
2 teaspoons dried thyme
1 1/2 tablespoons olive oil
1 1 1/2-pound Cornish game hen, halved lengthwise
1/2 cup dry white wine
