Modern Sausage Sandwich with Ginger and Mustard Relish

Ingredients

2 1/2 tablespoons prepared hot English mustard (such as Colman's)
4 teaspoons minced stem ginger in syrup* plus 2 tablespoons syrup from jar
4 6-inch-long linguiça sausages or other fully cooked sausages, cut in half lengthwise
Butter, room temperature
1 14-inch-long by 4-inch-wide piece of ciabatta bread or French bread, cut horizontally in half
2 large tomatoes, thinly sliced
2 large bunches arugula

Preparation

  1. Step 1

    Mix mustard, minced stem ginger and 2 tablespoons ginger syrup in small bowl.

    Step 2

    Place sausages, cut side down, in large nonstick skillet. Cook over medium heat until heated through and beginning to brown, about 5 minutes per side.

    Step 3

    Spread butter over cut sides of bread. Spread mustard mixture over butter. Arrange tomato slices and arugula on bottom half. Top with sausages. Top with remaining bread. Cut crosswise into 4 sandwiches and serve.
