This is not a particularly low-glycemic dessert, but it is a good one and may be eaten occasionally.

Ingredients

2 medium Golden Delicious apples (unpeeled), cored and cut into chunks
One 8-ounce can unsweetened pineapple chunks (in own juice)
1/2 cup seedless grapes
1 satsuma orange, peeled and sectioned (optional)
1/2 cup orange juice
1/4 teaspoon ground cinnamon
1 tablespoon butter, cut into pieces

Preparation

  1. Preheat the oven to 350 degrees. In a 7-by-11-inch baking dish, combine the apples, pineapple with its own juice, grapes, and satsuma, if desired. Drizzle with the orange juice and sprinkle with the cinnamon. Add the butter, stir, and cover. Bake just until the apples are tender, 20 to 30 minutes.
