Easy Bean Burritos

These burritos are easy because you are not so much cooking a meal as putting the ingredients on the table. Everyone then makes his or her own.

Recipe information

  • Yield

    6 servings

Ingredients

6 burrito-size (10-inch) flour tortillas
One 16-ounce can spicy vegetarian refried beans
Finely shredded lettuce
2 to 3 medium finely diced tomatoes
1 cup grated cheddar or Monterey Jack cheese, or cheddar- or Jack-style soy cheese, optional

Preparation

  1. Step 1

Preheat the oven or toaster oven to 400°F. Wrap the entire batch of tortillas in foil and warm while you prepare the filling.

    Step 2

Combine the refried beans with 1/4 cup water in a saucepan and heat slowly until hot, stirring occasionally. Transfer to a serving container.

    Step 3

Place the lettuce and cheese into separate bowls. Have everyone make his or her own burritos as follows: Spread some of the refried beans down the center of each tortilla, followed by a sprinkling of lettuce, tomatoes, and the optional cheese. Roll up snugly and eat out of hand.
