1 (15-ounce) can black-eyed peas, rinsed and drained
1 cup chopped chopped cooked ham (5 ounces)
1 celery rib, chopped
1/2 cup chopped red onion
1 small garlic clove, chopped
1 teaspoon finely chopped fresh jalapeño
2 1/2 tablespoons red-wine vinegar
2 tablespoons vegetable oil
1/4 cup chopped flat-leaf parsley

Preparation

  1. Stir together all ingredients and season with salt and pepper. Let stand at room temperature 1 hour before serving.
